Warm veggie and quinoa salad: Bake cauliflower bits and chickpeas in your favorite Indian spices/curry. Combine with cooked quinoa, chopped cucumber, chopped tomato, thinly sliced red onion and arugula. Top with cilantro, homemade or your favorite ranch dressing and tahini. YUM!
